The summer sunshine may not come as often as we hope, but the barbecue is always ready and waiting for its day in the sun!

Burgers and bangers disappear from the shelves, but why not spice up your life and impress your guests with an array of luxurious treats?

Easy to prepare, simple to cook and you won’t lose out on precious tanning time!

So with that in mind, forget the burgers and feast your eyes on The Leisure Lounge’s fab five barbecue favourites…

Honey-Glazed Pork Chops with Halloumi & Apricots

If there’s a dish to tantalise the taste buds, then this is sure to hit the mark. Take 4 tbsp of honey, 2 tbsp of cider vinegar, 1 tsp of thyme and a pinch of black pepper and stir until the honey dissolves. Grill the chops for three minutes then flip, glaze and cook for a further three, repeating until cooked through.

Rest the chops and grill the sliced halloumi until golden, then add halved apricots and cook until soft and marked. Serve with lemon-dressed rocket leaves for a mouth-watering summer treat!

Sweet ‘n Sour Swordfish Kebabs

Grilled fish is the in-dish on barbecue grills this summer and nothing whets the appetite more than sweet-and-sour swordfish kebabs – quick and easy, mild and meaty with a mouth-watering sauce and sweet summer vegetables.

You don’t need to be a master chef to impress your guests; simply coat chunks of swordfish in sweet-and-sour sauce, adding chunks of pepper, tomato and courgette before threading them evenly onto skewers. Cook for 8 to 10 minutes and serve with extra sauce.

Grilled Lobster Tails with Chilli-Lime Butter

Seafood and spice are all things nice and this decadent barbecue treat is certain to impress your hungry pack. Evenly mix melted butter, chilli powder, lime zest, lime juice, jalapeño and salt; leave the flavours to infuse as you split your lobster.

Remove the claws, crack the shells and drizzle with one tablespoon of your sumptuous chilli-lime butter. Season the tails with your favourite BBQ rub and cook with the claws for five minutes each side.

Spoon chilli-lime butter onto the tails and continue cooking until done. Serve with the remaining chilli-lime butter for a tasty dip!

The Perfect Chilli Dog

Try this smoky, cheesy twist on an American classic. Infuse more BBQ flavour into your chilli by roasting the ingredients and then finishing it off stovetop. Place a large, olive oil-soaked bulb of garlic in aluminium foil and hide in the coals to roast.

Grill several whole tomatoes, chilli peppers of choice, and two onions until lightly blackened. Flip a few patties of ground beef on the grill to get a bit of a charcoal effect and then chop all the ingredients and mix in a saucepan with beans (if that’s how you roll), some water, salt, cayenne to taste, and a dash of flour to thicken.

Grill the hot dogs until their skin starts to get bubbly and dark then split them down the middle and slip in a few slices of fresh mozzarella to melt as you toast the hot dog buns until they develop nice char lines.

Top the cheese-stuffed hot dogs with your smoky, spicy chilli and then a line of sour cream and be prepared for a messy masterpiece.

Bacon-Wrapped Chicken Stuffed with Goat’s Cheese

Turn your chicken thighs into heavenly treats with a recipe bursting with flavours that are sure to make your mouth happy. Simply de-bone the moist, dark meat and drown in a zesty lemon-olive oil marinade.

Stuff with a delicious blend of creamy goat’s cheese, red peppers and onion and wrap with the finest smoky bacon.

Let the flavours infuse on the barbecue before indulging in this simple, but luxurious, taste explosion.
